How do you run Sonic Pi in headless mode on Windows?

I want to run the Sonic Pi server on it’s own, without the default GUI, but I’m not sure how to do this on Windows. I’m thinking about using another GUI with it.

Apologies, but there’s no official ‘headless mode’.
