Ah ha! Thanks to some help from this post, I figured it out - Controlling external software synths with MIDI. Except, for my version of OSX I had to click Window > Show MIdi Studio within Audio Midi Setup. Then all I had to do was double-click IAC Driver and tick “Device is Online”.
